The new “Dumpling Burger with Tsumari Pork and Kagura Nanban Tartar” will be available at the “Echigo-Tsumari Art Triennale 2022” from June 30 (Thu).

This is the second new “TSUMARI BURGER – Dumpling Burger with Tsumari Pork and Kagura Nanban Tartar”.

Dumplings are gyoza or shumai.The hamburger steak made with Tsumari pork looks like a hamburger steak, but its firm texture and flavor are just like shumai (steamed pork dumplings).It is sandwiched between a bun with the aroma of wheat, and finished with tartar sauce containing pickled “Kagura Nanban,” a pepper well-known in the Tokamachi area, and a punchy teriyaki sauce.

The Echigo-Tsumari region, which includes Tokamachi City and Tsunan Town in Niigata Prefecture, is currently hosting the Echigo-Tsumari Art Triennale 2022, a world-class art festival held once every three years.Echigo-Tsumari Art Triennale not only exhibits artworks to the public, but also operates restaurants and cafes, proposes menus unique to the region, and holds food-related performances in order to promote the enjoyment of the culture of the Echigo-Tsumari region.

One of these is the TSUMARI BURGER served at the Echigo-Tsumari Satoyama Museum of Contemporary Art MoET in Honmachi, Tokamachi City.Chef Fumio Yonezawa, who was the first Japanese sous chef at Jean-Georges, a New York-based French restaurant that continues to win three stars every year, supervised this hamburger, which is made with a variety of local ingredients.

This is the “TSUMARI BURGER – Tsumari Pork Special Mentshi-Katsu” that was introduced last year, which is currently being offered.This addictive burger features a crispy Tsumari pork menchikatsu, pickled cabbage and carrots, homemade mayonnaise, and is topped with bittersweet butterbur fritters.The original buns are kneaded with onion and cheese.

Homemade craft cola 500 yen (tax included)

The company also offers “homemade craft colas” starting in early June.It is made with a blend of several spices, including cardamom, grove, allspice, cinnamon, and ginger, and accented with lime, reminiscent of cola’s origins.

TSUMARI BURGER and Craft Cola are served at the community space on the first floor of the Echigo-Tsumari Satoyama Museum of Contemporary Art MoET.Burgers will be available from 11:00 am.
