On Monday, February 21, a new product will go on sale that combines Kanzuri with sake from the Kiminoi Sake Brewery, which is brewed to go well with Kanzuri, a spicy seasoning that is a specialty of Myoko City in Niigata Prefecture.
This new product is a collaboration between Kanzuri and the Kiminoi Sake Brewery in Myoko City, with the aim of boosting the local community through cross-industry product planning. The set includes “Kanzuri Enoki Mushrooms in Kanzuri” and “Kiminoi Sake that makes you miss Kanzuri” for 2,000 yen (tax included).
As the name implies, the “Kanzuri ga Koishina ni Okeru Sake” created by Kiminoi Shuzo is a sake brewed to go well with Kanzuri.

The most important thing in making sake is the compatibility with kanzuri. The toji (brew master) and other employees worked together to make sure the sake was compatible with kanzuri. Kanzuri, which has been loved in Myoko since ancient times, and Kiminoi’s sake are both fermented foods made from rice malt. Snow is essential for their production, which means they have a strong affinity and work well together.
