{"id":2345,"date":"2020-07-08T14:45:07","date_gmt":"2020-07-08T05:45:07","guid":{"rendered":"https:\/\/www.yukiguni-journey.jp\/?p=2345"},"modified":"2020-07-14T14:24:41","modified_gmt":"2020-07-14T05:24:41","slug":"kubiki-sake-brewery-releases-tsuchi-daichi-kakizaki-ward-joetsu-city","status":"publish","type":"post","link":"https:\/\/www.yukiguni-journey.jp\/en\/2345\/","title":{"rendered":"Kubiki Sake Brewery released \u201cTsuchi DAICHI\u201d <br>(Kakizaki-ward, Joetsu City)"},"content":{"rendered":"<h2>Enjoy the land of Kakizaki!<\/h2>\r\n<p>Kubiki Sake Brewery in Joetsu City, Niigata Prefecture, has released the 5th \u201cTsuchi DAICHI\u201d in the series.<br \/>\r\nThe \u201cHakkei Kubiki\u201d series of sake has eight flavors that capture the essence of the local Kakizaki Ward.<br \/>\r\n<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-117687\" src=\"https:\/\/www.joetsu.ne.jp\/wordpress\/wp-content\/uploads\/2020\/07\/c9abe45fe72aec1a4096b6a8373411f9.jpg\" alt=\"200707_\u516b\u6075\u304f\u3073\u304d\" width=\"800\" height=\"450\" data-low-src=\"https:\/\/www.joetsu.ne.jp\/wordpress\/wp-content\/uploads\/2020\/07\/c9abe45fe72aec1a4096b6a8373411f9-400x225.jpg\" \/><\/p>\r\n<p>\u201cTsuchi DAICHI\u201d uses 100% sake rice \u201cGohyakumangoku\u201d grown in Kakizaki. \u00a0<br \/>\r\nThe water for sake making uses the spring water from Mt. Ogami: \u201cOodeguchi Sensui\u201d.<\/p>\r\n<p>This series of sake was started six years ago by the Kubiki Sake Brewery to represent the local Kakizaki ward with eight tastes of sake. \u00a0So far, four types have been sold: Daiginjo\u2019s \u201cSORA (sky)\u201d, Junmai Daiginjo\u2019s \u201cKAZE (wind)\u201d, Yukimuro Aged Junmai Ginjo\u2019s \u201cYUKI (snow)\u201d, and Junmai Ginjo Shizuku \u201cYOU (sun)\u201d. While the ginjo type was the main type, the fifth \u201cTsuchi DAICHI(earth)\u201d is Junmaishu.<br \/>\r\n**\u00a0 \u201cJunmaishu\u201d is made only with rice, koji and water.<br \/>\r\n\u00a0 \u00a0 \u00a0 &#8220;Ginjo&#8221; is a premium sake made with only the best part of the rice. The outer layers have been removed.<br \/>\r\n\u00a0 \u00a0 \u00a0 &#8220;Koji&#8221; is a fungus. This is the vital ingredient when making sake.<\/p>\r\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-117682\" src=\"https:\/\/www.joetsu.ne.jp\/wordpress\/wp-content\/uploads\/2020\/07\/Still0707_00005-1.jpg\" alt=\"Still0707_00005 (1)\" width=\"800\" height=\"450\" data-low-src=\"https:\/\/www.joetsu.ne.jp\/wordpress\/wp-content\/uploads\/2020\/07\/Still0707_00005-1-400x225.jpg\" \/><\/p>\r\n<p>As the name suggests, the rice polishing rate has not been announced, and as the name implies, it is sake that you want to taste to enjoy the essence of Kakizaki.<\/p>\r\n<p>Mr. Yagi, CEO of the brewery, said, \u201cI wanted to make regular sake in the series of Hakkei Kubiki.<br \/>\r\nIt has a taste which complements a wide range of dishes. \u00a0It goes well with yakitori sauce or light white fish sashimi.\u201d<\/p>\r\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-117686\" src=\"https:\/\/www.joetsu.ne.jp\/wordpress\/wp-content\/uploads\/2020\/07\/Still0707_00001-1-1.jpg\" alt=\"Still0707_00001 (1)\" width=\"800\" height=\"450\" data-low-src=\"https:\/\/www.joetsu.ne.jp\/wordpress\/wp-content\/uploads\/2020\/07\/Still0707_00001-1-1-400x225.jpg\" \/><\/p>\r\n<p>We are even more particular about the liquor stores selling these products. Hakkei Kubiki is only sold at nine specialty sake stores in the prefecture. \u00a0All of them have a relationship of trust with the brewery in terms of the store management being able to enhance the brand power of the sake.<\/p>\r\n<p>In Joetsu city, there are three stores: \u201cMaidoya\u201d Kasugashinden 1, \u201cOoyama Liquor Store\u201d Omachi 4 and \u201cLocal sake shop Kojiya\u201d Sanwa Ward Shimonaka.<\/p>\r\n<p>\u201cTsuchi DAICHI\u201d costs 2,000 yen for 1.8 L and 1,200 yen for 720 ml (excluding tax).<\/p>\r\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-117684\" src=\"https:\/\/www.joetsu.ne.jp\/wordpress\/wp-content\/uploads\/2020\/07\/Still0707_00003-2-1.jpg\" alt=\"Still0707_00003 (2)\" width=\"800\" height=\"450\" data-low-src=\"https:\/\/www.joetsu.ne.jp\/wordpress\/wp-content\/uploads\/2020\/07\/Still0707_00003-2-1-400x225.jpg\" \/><\/p>\r\n<p>Mr. Sugita, the managing director of \u201cMaidoya\u201d, has said that \u201cit costs 2,000 yen for one bottle and we feel this represents a very good value. \u00a0It is a liquor store\u2019s job to promote it as a brand representing the local area\u201d.<\/p>\r\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-117683\" due to COVID-19. \u00a0However, I would like this \u201cTsuchi DAICHI\u201d to set a benchmark for the future direction of this product. \u00a0\u201cI hope people will drink this \u201cTsuchi DAICHI\u201d and feel the blessings of the land of Kakizaki. \u00a0I want to do my best to increase the number of customers who say that they want to drink all eight types in the series.&#8221;<div
